3-Ravitoto amin’ny voanio (Cassava leave with coconut milk)

Ingredients

– 400g minced cassava leave (ravitoto)
– 3 dishes garlic
– 1 shallot
– Thumb size ginger
– 250g beef
– 1 tin coconut milk
– 1 tablespoon brown sugar
– Salt in your liking

Preparation

Clean the meat and dice the in to a small size.
Cut the shallot.
Crush the garlics and ginger.
Mince the cassava leave (You can find minced kassava leave in African or Asian shop, it can be in a tin or frozen).

Cooking

Add salt and shallot into the the diced meat and cook in a medium size pot on a medium heat until soft.
Then add in the minced cassava leave and crushed garlic and ginger. Cook for about 5mn.
Add the coconut meal and keep stirring until it boils.
Then add the sugar.
Let it cook for another 20mn on low heat and do not cover the pot. Stir halfway through.

Serving suggestion

Serve it with basmati rice accompanied with cucumber salad and scotch bonnet pepper sauce.
