
Ingredients

- Moringa leaves
– 6 garden eggs
– 1 shallot
– 4 tomatoes
– 250g edamame or cannellini beans (pre-cooked or canned)
– 2 pinches of salt (adjust to your liking)
Preparation
Remove the moringa leaves from the stems and wash.
Cut the shallot, tomatoes and garden eggs.
Wash the edamame bean.

Cooking
Boil water in a medium-sized pan.
Once the water has boiled, add the garden eggs, tomatoes, shallot, and salt. Then, cook for 5 minutes.
Add the moringa leaves and edamame or cannellini beans and let them cook for 3 minutes.
Stir, and your romazava is ready.
Serving suggestion
In Madagascar, this type of romazava is eaten as a side dish with white rice and zebu (beef) stew.
It can also be a wonderful accompaniment for rice and fried fish.
PS: There are different types of romazava. This simple version without any meat is called romatsatso.
You can also prepare chicken romazava (akoho romazava, a Malagasy favorite), beef romazava, fish romazava, and more, by substituting the edamame or beans with chicken, meat, or fish. In this case, the cooking process varies slightly. Be sure to check it out in my Akoho romazava section.
