
Ingredients

- 4 cocoyams
– 350ml coconut milk
– 100ml water
– 30g brown sugar
– 1/2 vanilla pod or 1/2 spoon vanilla extract
– 1/2 spoon cinnamon (optional)
– 1 pinch of salt
Preparation
Peel and wash the cocoyams thoroughly.
Cut the cocoyams into pieces and place them into a pan. Add an appropriate amount of water and a pinch of salt to enhance the flavor.

Cooking
Cook the cocoyams on a medium heat until the yam is a bit soft.
Then add the coconut milk.
Keep stirring until the mixture boils, then reduce the heat.
Add the sugar, cinnamon, and the vanilla pod or vanilla extract.
Stir for 1 minute and let it boil for another 5 minutes.
Stir the sawaba again and taste to check the sweetness. If it’s not sweet enough for your liking, you can add a bit of sugar and let it boil for another 3 minutes.
Serving suggestion
Serve the sawaba while it is still warm.
In the Northeastern region of Madagascar, sawaba can be enjoyed for breakfast or as a warming snack on a chilly day.
You can also enjoy it as a dessert.
