4-Mofo anana (Vegetable fritters)

Ingredients

​- 80g watercress
– 2 egg​s
– 6 cherry tomatoes
– 2 carrots
– 20g coriander (optional)
– 1/2 Scottish bonnet (optional)
– 4 spring onions
– 250g self raising flour
– 20g cornstarch
– 60ml water
– 1/2 teaspoon salt
–  1/2 teaspoon curry powder
– 1/2 teaspoon black pepper
– 1/2L sunflower oil

Preparation

Cut the vegetables and tomatoes finely after washing them.
Grate the carrots.
In a big bowl, whisk the eggs.
Add all vegetables in to the whisked eggs.
Cut the scottish bonnet and coriander and add into the mixture (if using scottish bonnet and coriander).
Add salt, pepper and curry powder.
Add the corn starch, the flour and mix well.
Add the the water.

Cooking

Preheat the oil in a dip fryer or a frying pan at medium temperature. Once the oil get hot, pour one tablespoon of the batter until the pan fryer or dip fryer is full. cook the batter until it is golden brown.

Place an absorbent paper on a plate and put the fried ‘mofo anana’ on the plate so that the access oil get absorbed.

Serving suggestion

Serve it as a starter or as an accompaniment to a barbecue.
If you didn’t add a Scottish bonnet pepper in the batter, eat the fritter with Scottish bonnet sauce to give it a little spice.
